SELECCIÓN

Grape Variety: 25% Monastrell, 25% Tempranillo, 25% Garnacha Tintorera, 25% Syrah

Current Vintage: 2012

 

Vineyard: 750-950 metres altitude, 65-90-year-old dry-farmed pre-Phylloxera Monastrell, Garnacha Tintorera and Tempranillo bush vines from our oldest vineyard plots and trellised Syrah vines, organic farming methods, nutrient-poor and limestone-rich soil, scarce rainfall.

 

Ageing: 12-14 months.

 

Type of Cask: French Allier fine grain medium-toasted oak casks (500 L).

Vinification: Tempranillo grapes are harvested in the second week of September, Garnacha Tintorera and Syrah grapes at the end of September and Monastrell in the third week of October. The grapes for this wine are chosen from the best plots on our estates, hand-harvested for higher concentrations of tannins at the optimal moment of phenolic ripeness for each variety. Maceration takes place during 22 days at 29 °C with manual pumping of the young wine. Once racked the wine on its lees undergoes manual bâtonnage up to once a month after malolactic fermentation. The four varieties are then blended for ageing in 500 litre fine grain French Allier oak casks for up to 14 months. The wine is then bottled unfiltered to mature for a further 18 months prior to release.

 

Tasting Notes: Dark ruby red with an intense and complex nose of spicy wild plums, prunes and roasted peppers. Vibrant and elegant on the palate with good structure, balanced acidity and firm polished tannins. It is full bodied with a lingering, silky finish.

 

Food Pairing: Enjoy this wine with hearty dishes for the coming 5-10 years.

RESERVA

Grape Variety: 50% Monastrell, 30% Garnacha Tintorera, 20% Tempranillo.

Vineyard: 750-900 metres altitude, 45-65-year-old dry-farmed bush vines from our best vineyard plots, organic farming methods, nutrient-poor and limestone-rich soil, scarce rainfall.

 

Ageing: 12 months.

 

Type of Cask: American fine grain medium-toasted oak casks (300 L)

Vinification: High-altitude Monastrell, Garnacha Tintorera and Tempranillo grapes are sourced from dry-farmed 45-65-year-old bush vines from our best vineyard plots. Grapes are harvested from the beginning of September (Tempranillo) to the end of October (Monastrell) followed by a hand-selection of the ripest bunches at the winery and maceration and fermentation of each variety separately during three to four weeks at 27-28 °C. The young wine of each variety is racked several times to remove the heaviest lees and then stored in stainless steel tanks for 8-10 months prior to blending the various varieties and ageing the wine for 12 months in 300 litre fine grain medium-toasted American oak casks. The wine is then bottled after undergoing gentle filtration and aged for a minimum of 9-12 months in bottle prior to release.

 

Tasting Notes: Ruby-coloured with a cherry-brick rim, this finely balanced Reserva red wine offers a complex nose of raspberries, stewed plums, and spices with vanilla notes. Rich and delicate on the palate with great depth and a lingering smooth finish.

 

Food Pairing: The Reserva red wine goes well with red meats dishes of all kinds, game birds, and also grilled fish dishes.

 

Serving Temperature: Best served at 16-18 °C.

CRIANZA

Grape Variety: 50% Monastrell, 30% Tempranillo, 20% Cabernet Sauvignon.

Vineyard: 700-800 metres altitude, 20-40 years-old trellised and dry-farmed bush vines, organic farming methods, nutrient-poor and limestone-rich soil, scarce rainfall.

 

Ageing: 6 months.

Vinification: High-altitude Monastrell, Tempranillo and Cabernet Sauvignon grapes are sourced from trellised and bush vines that are 20-40 years old. Grapes are harvested from the end of September, followed by maceration with the skins and then fermentation during 15 days.

 

Tasting Notes: Rich, tasty red with vibrant plum flavours on the palate and aromas of prunes, black pepper and leather on the nose.

 

Food Pairing: Medium-bodied with good acidity, this wine drinks well on its own or with grilled, roasted or fried dishes, barbecued red meats, cured meat (jamón, chorizo, etc.) and mild cheese.

COLECCIÓN TINTO

Our Colección range consists of unoaked wines that are carefully made from sustainably-grown grapes sourced solely from our Finca los Timonares single estate located in the heart of the Almansa region at an altitude of over 750m.

 

Grape Variety: 100% Garnacha tintorera.

 

D.O.P.:  Almansa

 

Current Vintage: 2016

 

Vineyard: 110 hectares, single estate 700-800 metres altitude organic farming methods, nutrient-poor and limestone-rich soil, scarce rainfall.

 

Vinification: Garnacha Tintorera grapes, indigenous to the D.O.P. Almansa wine region and unique for their dark purple flesh, are sourced from trellised and bush vines of 20-40 years of age. Grapes are harvested during the second week of September followed by a very short maceration with the skins to preserve the fruit and soften the tannins and then fermentation at low temperature during 15 days.

 

Tasting Notes: Garnacha Tintorera characteristically has a vibrant deep colour with rich aromas of cassis, sweet strawberries and raspberries and sage. On the palate, this unoaked medium-bodied red wine is full of lingering flavours of ripe plums, black pepper and herbs.

 

Food Pairing: Enjoy this smooth red on its own or with grilled, roasted or fried dishes, barbecued red meats, rice dishes, cured salted meats (jamón, chorizo, etc.) and mild cheese.

Our Colección range consists of unoaked wines that are carefully made from sustainably-grown grapes sourced solely from our Finca los Timonares single estate located in the heart of the Almansa region at an altitude of over 750m.

 

Grape Variety: 100% Syrah

 

D.O.P.:  Almansa

 

Current Vintage: 2017

 

Vineyard: 110 hectares, single estate 700-800 metres altitude organic farming methods, nutrient-poor and limestone-rich soil, scarce rainfall.

 

Vinification: Syrah grapes are selected from vines with a high leaf to fruit ratio to preserve the high acidity and freshness of the grapes. Grapes are carefully chosen and harvested at night in the last week of August, macerated with the skins for 12 hours to extract colour and aromas, then fermented at low temperature for 20 days.

 

Tasting Notes: A smooth and harmonious wine, with the intense colour typical of rosé wines from the D.O.P. Almansa region, and a perfect balance between the body of the wine and its natural acidity.

 

Food Paring: The freshness, ripe red fruit aromas and softness of this dry rosé wine make it perfect to serve with rice and pasta dishes as well as cheese. To be enjoyed with food or simply on its own.

 

Serving Temperature: Best served at 6-8 °C.

COLECCIÓN BLANCO

Our Colección range consists of unoaked wines that are carefully made from sustainably-grown grapes sourced solely from our Finca los Timonares single estate located in the heart of the Almansa region at an altitude of over 750m.

 

Grape Variety: 60% Verdejo, 40% Sauvignon Blanc.

 

D.O.P.:  Almansa

 

Current Vintage: 2017

 

Vineyard: 110 hectares, single estate 700-800 metres altitude organic farming methods, nutrient-poor and limestone-rich soil, scarce rainfall.

 

Ageing: 4-6 months on fine lees with regular bâtonnage.

 

Vinification: Verdejo and Sauvignon Blanc grapes sourced from our coolest high-altitude vines are carefully selected and harvested at night during the last two weeks of August and then fermented at low temperature for over 30 days.

 

Tasting Notes: A fresh and crisp medium-bodied white wine with intense citrus, lime and tropical notes and a persistent finish.

 

Food Pairing: Food-friendly wine to enjoy with dishes such as grilled salmon, seared scallops, chicken, rice dishes, a fresh summer salad or simply on its own.
