D.O.P.: ALMANSA
VINEYARDS: 110 hectares, single estate. 700-800 metres altitude, organic farming methods, soils poor in nutrients and rich in limestone, low rainfall.
VINIFICATION: Garnacha Tintorera, a grape native to the Almansa P.D.O. and unique for its dark purple flesh, is obtained from 20-40 year old dry-farmed trellised and goblet-trained vines. The grapes are harvested from the second week of September. Short maceration to preserve the fruit and soften the tannins followed by fermentation at low temperature for about 15 days.
Tasting Note
Garnacha Tintorera is a very characteristic grape, presenting a very deep and lively purple colour, with rich aromas of sweet strawberries, raspberries and sage. On the palate this medium-bodied, un-oaked wine is full of lingering flavours of ripe plums, black pepper and herbs.
Gastronomy
Enjoy its mild flavour on its own or with tapas, roasted or fried dishes, grilled red meats, rice dishes, cured salted meats (ham, chorizo, etc.) and semi-cured cheeses.
Best served at 16-18º C.
