GRAPE: 60% Verdejo – 40% Sauvignon Blanc
VINEYARDS: 110 hectares, single farm. 700-800 m altitude organic farming methods, nutrient-poor, limestone-rich soils, low rainfall.
AGEING: 4-6 months on fine lees with periodic bâtonnage.
VINIFICATION: The Verdejo and Sauvignon Blanc grapes come from our own freshest vineyards. Carefully selected vineyards and night harvest during the last two weeks of August. Fermentation at low temperature for more than 30 days.
Dry, fresh and fruity medium-bodied white wine with intense notes of citrus, lime and tropical fruits and a lingering finish.
Recommended to enjoy on its own or with dishes such as grilled salmon, scallops, rice dishes or a fresh summer salad.
It is recommended to serve at 6-8º C.
