GRAPE: 65% Verdejo – 35% Sauvignon Blanc
VINEYARDS: Trellised vineyards 20-25 years old, grown at 750-850 metres above sea level. Organic farming, soil poor in nutrients and rich in limestone. Low rainfall.
AGEING: 3-4 months on its fine lees. Regular manual bâtonnage.
VINIFICATION: Verdejo and Sauvignon Blanc grapes from our coolest vineyards at altitude. Careful selection in the vineyard. Harvest at night during the first two weeks of September. Fermentation at low temperature for approximately 15 days.
White wine, limpid and bright. Fresh, citric and fruity. Reminiscent of lime and tropical fruit. Long and persistent aftertaste.
Especially recommended with fish dishes, such as grilled salmon, or with seafood, such as scallops. Enjoy it also with white meats, chicken or salads.
Best served chilled between 6 – 8 °C.
