Marius Cabernet Sauvignon

GRAPE: 100% Cabernet Sauvignon

D.O.P.: ALMANSA

VINEYARDS: 700-800 metres above sea level, single estate of 110 hectares, trellised vines 25-30 years old, organic farming methods, nutrient-poor soils rich in limestone, low rainfall.

HARVESTING: Grapes are harvested at night with optimum ripening at the end of September.

AGEING: 6 months in fine grain, medium toasted American barrels (300 L).

VINIFICATION: Total maceration for 18 days, fermentation with a gradual increase in temperature to 29ºC to obtain a good colour followed by a gradual decrease to 23ºC to preserve the primary aromas of the fruit.

Tasting Note

A full-bodied red wine with deep colour, complex fruit aromas, pronounced tannins and elegant structure. Its time in oak develops a wide range of flavours with hints of smoke, cedar, liquorice and an attractive touch of truffle. Great ageing potential.

Enjoy this tasty red wine on its own or with roasted or grilled meats, game birds, rice and pasta dishes with rich sauces, stews or roast lamb, stuffed red peppers, roasted aubergine, tapas, cured meats (ham, chorizo, etc.) and mature cheeses.

It is recommended to serve at 16-18º C.
