GRAPE: 60% Verdejo – 40% Sauvignon Blanc

D.O.P.: ALMANSA

VINEYARDS: 700-750 metres above sea level, trellised vines 25-30 years old, certified organic farming. Soils poor in nutrients and rich in limestone. Low rainfall.

AGEING: 3-4 months on its fine lees with a weekly bâtonnage.

VINIFICATION: The organic Verdejo and Sauvignon Blanc grapes come from our oldest vineyards located at altitudes below 700-750m to allow the grapes to ripen more. At the beginning of the year, we carry out a small green pruning in order to reduce the yield per vine and to obtain a higher ripening and concentration of sugars and aromas per bunch.
Careful selection of the best bunches at harvest, night harvesting during the first two weeks of September. Cold maceration (6ºC) for 48 hours to concentrate the aromas. Fermentation in stainless steel tanks and then stopped by cold in order to leave the product with unfermented sugar, achieving in the final product those primary aromas of fruit and natural sweetness.
Maturation for 3-4 months at low temperature in stainless steel tanks with a weekly bâtonnage keeping the fine lees in suspension. After this time, decanting by gravity and bottling.

Tasting Note

Straw yellow in colour, pale and bright. Fresh and elegant on the palate, medium-bodied with citrus and ripe notes, reminiscent of lime and tropical fruit. Smooth and persistent finish. A product of great balance obtained by its permanence on its fine lees.

Gastronomy

Enjoy this white wine on its own or as an aperitif with dishes such as grilled salmon, scallops, fish, white meats, rice dishes, pasta and grilled vegetables.

It is recommended to serve between 6-8º C.
