GRAPE: 60% Verdejo- 40% Sauvignon Blanc
VINEYARDS: Single estate of 110 hectares. 700-800 metres above sea level, organic farming, soils poor in nutrients and rich in limestone, low rainfall.
AGEING: 4-6 months on fine lees with periodic bâtonnage.
VINIFICATION: The Verdejo and Sauvignon Blanc grapes come from our own freshest vineyards. Carefully selected vineyards and night harvest during the last two weeks of August. Fermentation at low temperature for more than 30 days.
Dry, fresh, fruity, medium-bodied white wine, with intense notes of citrus, lime and tropical fruits. Long and persistent finish.
Recommended to enjoy on its own, or with dishes such as grilled salmon, scallops, rice dishes or a fresh summer salad.
It is recommended to serve between 6-8º C.
